How to Meal Prep: Weeknight Chicken Pad Thai with Seared Vegetables

We know how busy life can get, thankfully meal prepping is a game changer, and we are all about helping you plan meals ahead for the next day (or week)! By prepping one or a few Local Crates ahead of time you can have healthy lunches and dinners ready all week. Simply store them in leak-proof storage containers, and you can be out the door in minutes with a tasty lunch in hand.

Here are some simple steps you can follow to meal prep your Weeknight Pad Thai and keep it fresh and enjoyable:

  • Cook your Local Crate according to recipe card instructions, until you get to Step #6. Divide Pad Thai between two containers and let them cool before covering. DO NOT garnish with toasted peanuts and cilantro. Instead, store toasted peanuts and cilantro in a separate zip-top bag or small container (this will keep the peanuts from getting soggy and the cilantro from wilting in the microwave).
  • Uncover container. Sprinkle Pad Thai with 1-2 tbsp water. Heat for 1:30-2:00 minutes in microwave or hot pan. After re-heating Pad Thai, top with toasted peanuts and cilantro. This will ensure the peanuts stay crunchy and the cilantro stays fresh and flavorful.
