Agave-Lime & Sweet Paprika Steak Tacos

Tender grilled top sirloin tacos with corn tortillas, red cabbage slaw and agave, sweet smoked paprika & lime dressing.

Agave is a sugar alternative that brings a wonderful sweetness and balance to the sassy smoked paprika and lime in this crunchy slaw. These tacos are quick to cook, and perfect for a those busy summer weeknights when you need a quick, healthy meal.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Preheat grill to 400ºF. Wash and dry all produce. Mince or grate garlic. Zest lime; cut in half then, juice. Tear cilantro leaves and stems. Thinly slice red cabbage avoiding the hard inner core, discard core. Remove root end from radish and discard; then, thinly slice. Remove steak from package; rinse and pat dry.

Step 2: MAKE AGAVE DRESSING

Combine smoked paprika, agave, garlic, 1 tsp. lime zest, 1 ½ Tbsp. lime juice, 2 Tbsp. oil and a pinch of salt and pepper in a small bowl; then, mix until incorporated.

Step 3: MAKE SLAW

Mix cabbage, radishes, cilantro, half agave-lime dressing and a pinch of salt and pepper. Toss until combined and set aside.

Step 4: SEAR STEAKS

Place steak on hot, lighly oiled grill or sauté pan over medium-high heat with 1 tsp. oil and sear 2-3 min per side until charred and cooked to desired doneness. USDA recommends cooking beef to an internal temperature 145ºF.

Step 5: PREP TORTILLAS

When the steak has 3 min left place tortillas on grill or sauté pan over medium-heat for 30-60 sec per side until warmed. Remove from heat.

Step 6: PLATE YOUR DISH

Place a couple pieces of steak on each tortilla to form the tacos. Top each taco with slaw and serve with reserved agave-lime dressing as dipping sauce. Enjoy!
