Step 1: COOK THE GRAINS

Read through entire recipe before getting started. In a small pot over medium heat, add ancient grains mix to 2 1/3 cup water and season with a pinch of salt and pepper. Bring to boil; reduce heat to simmer, cook about 20-25 min. Drain grains well and set aside. While grains are cooking; start mise en place (Step #2).

Step 2: MISE EN PLACE

Preheat oven to 400ºF. Wash and dry all produce. Slice grapes in half lengthwise. Remove center rib from kale, and discard. Chop leaves into large pieces (see instruction card included in your bag). Slice delicata squash in half lengthwise, remove seeds with spoon and discard; slice into half moons ¼” thick. Crumble quark cheese.

Step 3: PREPARE THE SQUASH

Spread delicata squash over a foil-lined baking sheet. Sprinkle with garam masala, 2 tsp. oil, salt and pepper. Toss until fully coated.

Step 4: ROAST THE SQUASH

Spread squash in oven and roast until tender and golden brown, about 20-25 min.

Step 5: ROAST GRAPES AND KALE

Place grapes and kale on a second foil-lined baking sheet, without mixing. Drizzle with 2 tsp. oil and a pinch of salt and pepper. Roast until kale is crisp, about 8 min. Remove kale and set aside. Return grapes to oven and roast until golden and wrinkled, about 8 more min.

Step 6: PLATE YOUR DISH

Divide ancient grains between two bowls. Top with roasted squash, kale, grapes and quark. Season with a pinch of salt and pepper to taste. Enjoy!
