Balsamic Caramelized Mushroom & Goat Cheese Pasta

Tender spaghetti with sweet balsamic sauce, creamy tangy goat cheese, garlic, thyme and hearty caramelized onions.

Step 1: MISE EN PLAE

Read though the entire recipe before getting started. Wash and dry all produce. Bring 6 cups water, with a pinch of salt, to a boil in a medium pot. Mince or grate garlic. Slice cremini mushrooms into ¼" pieces. Remove thyme leaves from stem and discard. Remove goat cheese from package and crumble.

Step 2: COOK PASTA

Add spaghetti to boiling water; cook at a rolling boil for 10-12 min until pasta is al dente. Reserve ¾ cup pasta water, then drain well and set aside. While pasta is cooking, begin caramelizing the mushrooms (Step #3).

Step 3: CARAMELIZE MUSHROOMS

Heat 1 Tbsp. oil in medium pan over medium-low heat. Season mushrooms with a pinch of salt and pepper; then, sauté mushrooms for 5-8 min until softened and caramelized. Remove mushrooms from pan and set aside.

Step 4: MAKE SAUCE

Add garlic and thyme to previously used pan; sauté 1-2 min until aromatic. Add balsamic reduction, reserved pasta water and a pinch of salt and pepper. Simmer 3-5 min until lightly thickened and reduced to half.

Step 5: FINISH PASTA

Add spaghetti, kale and caramelized mushrooms to sauce and toss to incorporate and wilt kale. Add goat cheese crumbles on top and remove from heat.

Step 6: PLATE YOUR DISH

Divide pasta between two plates. Enjoy!
