Balsamic Glazed Salmon with Lemon Thyme Beets

Balsamic glazed salmon served over red beets in a lemon thyme butter sauce.

ABOUT THE DISH

Balsamic glaze is a thick syrup made from heating and reducing balsamic vinegar.  This concentrates the flavor, thickens the vinegar, and makes is considerably sweeter.

Step 1: MISE EN PLACE

Read through the entire recipe before beginning. Rinse and dry all produce. Zest lemon then juice. Peel shallot and dice. Remove thyme leaves from stems and chop. Peel beets and slice into rounds. Remove stem from greens and slice into 1 inch pieces. Rinse salmon filets and pat dry.

Step 2: COOK THE BEETS

In a large saute pan on medium heat. Melt the butter pats and add shallots to saute until softened 1-2 minutes. Add the beet slices to the pan and coat well with the butter and shallots. Reduce heat to low and saute, covered, until the beets begin to soften, about 8-10 minutes. Add white wine and lemon juice and return to a boil to allow liquid to reduce slightly and beets to finish cooking, about 5 more minutes.

Step 3: SEAR THE SALMON

In a medium saute pan, heat 2 tsp. oil on medium high heat. Add salmon filets and sear until firm and cooked through about 3 minutes on each side.

Step 4: FINISH THE BEETS

Once beets are tender, stir in beet greens, thyme and a pinch of salt and pepper. Cook uncovered until the greens are wilted, adding oil if needed, and allow most of liquid to be absorbed.

Step 5: GLAZE THE SALMON

Once salmon is cooked through, add glaze and lemon zest to pan to warm through. Flip salmon to coat well with glaze.

Step 6: PLATE YOUR DISH

Divide the turnips between the two plates and drizzle with the glaze. Add the salmon on top of the turnips and coat with the clementine mustard sauce. Enjoy!
