Beef Chow Fun

Tender rice noodles mixed with grass-fed ground beef, shiitake mushrooms, ginger, garlic, basil, and green onion in a savory, sesame tamari and hoisin sauce.

Chow fun refers to the wide rice noodles used in this dish. Beef chow fun is classic Cantonese dish with stir-fried vegetables and beef mixed with chow fun noodles.

Cooking terms for this recipe

Al Dente Literally “to the tooth”. Describes the ideal texture of cooked pasta that leaves it with a slight bite, rather than becoming mushy.
Stir-Fry To fry something over high heat quickly (with little oil) while stirring constantly.
Bias slice Cutting or slicing on a diagonal angle

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Bring 6 cups salted water to boil in a medium pot. Rinse and dry all produce. Remove and discard stems from shiitake mushrooms; thinly slice caps. Remove and discard root ends from green onions; then, bias slice. Tear basil into small pieces. Peel ginger (see ginger peeling instruction card) and finely dice. Mince or grate garlic. Remove ground beef from package; pat dry.

Step 2: COOK THE NOODLES

Remove boiling water from heat. Add rice noodles to water and let stand for 8-10 min; stirring occasionally, until noodles are al dente. Drain well; place back into pot and cover with cold water. While noodles are soaking, begin browning the beef (Step #3).

Step 3: BROWN THE BEEF

Heat 1 Tbsp. oil in large sauté pan over medium-high heat. Add ground beef and 5 spice to hot pan; cook 4-5 min, breaking up meat with a spoon as it cooks. Season with a pinch of salt and pepper. When cooked through, remove the beef from the pan with a slotted spoon and set aside in a bowl. Leave 1 Tbsp. of the rendered beef fat in the pan and discard the rest. The USDA recommends ground beef be cooked to an internal temperature of 165ºF.

Step 4: STIR FRY THE VEGETABLES

In the same pan over medium-high heat, add shiitake mushrooms and stir-fry until slightly brown and crispy on edges, about 2-3 min. Add ginger and garlic and sauté 1 min longer. Turn off heat; add green onions and ground beef.

Step 5: ASSEMBLE THE STIR FRY

Drain rice noodles very well and add to pan with beef and vegetables. Add chow fun sauce and mix well. Reduce heat to low and mix to warm through.

Step 6: PLATE YOUR DISH

Divide the chow fun between two bowls and garnish with basil. Enjoy!
