Beef Tostadas with Tomatillo Pico & Smoky Chipotle Sauce

Crispy tostadas topped with seasoned ground beef, re-fried beans and a tangy tomatillo pico de gallo.

Tostadas are fried or “toasted” tortillas served either flat or in a slight bowl shape. Local Crate’s version features refried beans, juicy, seasoned ground beef and tomatillo pico de gallo for a tangy twist. We drizzle a bit of Isabel Street Heat Chipotle sauce on top for an extra kick.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Peel and dice onion. Cut lime in half, then juice. Rough chop cilantro leaves and stems. Dice tomatillos. Shred radish. Open can of refried beans.

Step 2: RE-FRY BEANS

Heat 1 Tbsp. oil in a large sauté pan. Add a third of chopped onions, sauté 1-2 min. Add refried beans, salt and pepper. Cook, stirring, until soft and bubbly, about 3-5 min. Remove from pan and set aside. Wipe pan with paper towel.

Step 3: BROWN THE BEEF

Heat 1 Tbsp. oil on medium heat in the same pan used for beans. Add another third of chopped onions, sauté 1-2 min. Add ground beef, taco seasoning, and a pinch of salt and pepper. Cook until done, about 5-8 min. Remove from pan and set aside. Wipe pan with paper towel. USDA recommends cooking ground beef to an internal temperature of 165ºF.

Step 4: FRY TORTILLAS

Using the same pan again, heat ½ cup oil over medium heat. Fry tortillas one at a time until golden brown and crisp, about 1-2 min each side. Set on paper towel to drain.

Step 5: MAKE THE PICO

Mix 1 tsp. oil with remaining onions, tomatillos, cilantro, radish, lime juice, and a pinch of salt and pepper to taste in small bowl until combined.

Step 6: PLATE YOUR DISH

Spread refried beans on each tortilla. Add ground beef on top, then tomatillo pico. Drizzle with a little bit of chipotle sauce to taste. Enjoy!
