Beyond Meat Korean Tacos with Spicy Mayo

Warm corn tortillas topped with seasoned, crispy, beyond meat, radishes, fresh cilantro, and a cooling seasoned spicy mayo.

Korean inspired meals and tacos might be two of our favorite things these days. So we combined them into a Korean inspired taco with another one of our favorite products, Beyond Meat!
The tacos are caramelized with a tamari-sugar sauce for sweetness and flavor, gochujang (Korean sweet chili paste) and saut├ęd bok choy. This sweet, flavor packed meat is piled onto warm, soft tortillas and topped with fresh cilantro, radishes, and spicy mayo for a blend of flavors that will make you realize, fusion cuisine is the best kind of cuisine!

Ingredients
Corn tortillas
Plant-based mayo
Sweet tamari sauce
Radishes
Cilantro
Bok choy
Beyond Meat
Gochujang

Caramelize To cook a food (fruit or vegetable) slowly until it becomes brown and sweet.
Shimmering A description of flowing and shiny oil that is nearing its smoke point; an indicator your oil is very hot.
Mandolin A kitchen utensil with an adjustable blade that is used for thin slices or shreds.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Wash and dry all produce. Gently tear cilantro leaves and stems. Slice bok choy in half separating the green tops from teh white bottoms. Cut green bok choy leaves into strips and cut thick white bottoms into half moons. Keep separate. Remove root ends from radishes and discard; then thinly slice using a knife or mandolin. Remove beyond meat from package.

Step 2: MAKE SPICY MAYO

in a small bowl put mayo, 1/2 tsp. gochujang, 1 tsp. sweet tamari sauce and stir until well incorporated. Set in the fridge until ready to plate.

Step 3: COOK BEYOND MEAT

Heat 1 Tbsp. oil in a medium saute pan over medium-high heat until shimmering. Add Beyond Meat to pan and cook, breaking apart with a spoon or spatula until its beginning to crumble, abiout 4-5 min.

Step 4: SEASON BEYOND MEAT

Add bok choy bottoms and cook another 1-2 min until beginning to soften. Add remaining gochujang and sweet tamari sauce and cook stirring constantly, breaking apart until the meat begins to caramelize about 3-4 min. Remove from heat.

Step 5: WARM TORTILLAS

Place tortillas on a griddle or saute pan over medium heat for 30-60 sec per side until warmed. Remove from heat.

Step 6: PLATE YOUR DISH

Divide Beyond Meat evenly between tortillas. Top each taco with spicy mayo, radish slices, cilantro and bok choy. Enjoy!
