Caramelized Lemon Pork Chops with Mashed Potatoes

Sweet caramelized lemon pork chops with thyme, garlic and baby kale served over creamy mashed potatoes.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Smash garlic pressing with the back of a knife to break slightly. Thinly slice lemon. Dice potatoes into 1" cubes. Leave thyme sprigs whole. Remove pork chops from package; rinse and pat dry.

Step 2: COOK POTATOES

Place potatoes in medium pot covered by 2” of water over medium heat; add a pinch of salt. Bring to a boil; cook for 10-12 min until potatoes are tender. Turn off heat, strain potatoes, and return to pan. While potatoes are cooking, begin searing the pork chops (Step #3). Add heavy cream; mash using a potato masher or fork until incorporated. Season with salt and pepper.

Step 3: SEAR PORK CHOPS

Heat 1 tsp. oil in a medium sauté pan over medium heat. Season pork with a pinch of salt and pepper. Add to hot pan and sear on each side for 3-4 min for medium. Remove from heat.

Step 4: MAKE LEMON SAUCE

Add garlic, lemon slices and thyme to previously used pan. Sauté 1-2 min until softened. Add 1 1/2 cups water, sugar and a pinch of salt and pepper. Bring to a simmer.

Step 5: FINISH PORK CHOPS

Return pork chops to pan and cook 4-6 min until sauce has reduced to 1/4 of the original amount and pork chops have cooked through. Remove from heat. Add kale and toss until lightly wilted.

Step 6: PLATE YOUR DISH

Divide mashed potatoes during two plates. Top with one pork chop and plenty of sauce.
