Carne Asada Tacos with Caramelized Onions & Chipotle Sour Cream

Nothing makes us smile more than Taco Tuesday (or Taco Anyday…right?). These easy and flavor-packed tacos will bring a street classic to your home in less than 30 minutes. First, tender steak is cooked to perfection and sliced against the grain to keep the slices extra juicy. Then, you divide the steak into warm, soft tortillas and top with golden brown, sweet caramelized onions. An easy-peasy homemade chipotle-lime crema, fresh cilantro, radishes, and a squeeze of lime finish the tacos for a blend of flavors that will make your dinner simply amazing!

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Wash and dry all produce. Remove ends, peel, cut in half, then julienne onion. Tear cilantro leaves and tender cilantro stems, discard tough stems. Zest lime and cut in half. Juice one half and cut
the other into wedges. Remove ends from radish, then slice thin. Remove steak from package; rinse and pat dry.

Step 2: MAKE CHIPOTLE CREMA

Mix sour cream, chipotle, 2 tsp. lime juice, 1 tsp. lime zest and a pinch of salt and pepper in a small bowl until incorporated. Set aside.

Step 3: CARAMELIZE ONIONS

In a medium deep sauté pan or skillet, heat 1 Tbsp. oil over medium-high heat until shimmering. Add onion and sauté until it begins to soften, 4-5 min. Add ¼ cup of water and cook, stirring occasionally, until onions are very tender and a light golden brown, 6-8 min. Remove from pan.

Step 4: SEAR STEAK

Heat 1 Tbsp. oil in previously used skillet over medium-high heat. Season steak with a pinch of salt and pepper. Add steak to pan and allow to sear for about 2-3 min. Flip and sear the other side for about 3-5 min until cooked to desired doneness.

Step 5: WARM INGREDIENTS

Return onions to pan with steak and sauté another 1-2 min to flavor onions with pan juices. Cover and allow to rest until ready to plate. While the steak rests, place tortillas on a griddle or sauté pan for 30-60 sec per side until warmed and beginning to brown. Remove from heat and keep warm until ready to plate. Note: The USDA recommends cooking steak to an internal temperature of 145ºF.

Step 6: PLATE YOUR DISH

Thinly slice steak against the grain into 8-12 pieces. Divide steak and caramelized onions evenly between tortillas. Top each taco with radish slices, chipotle-lime crema and cilantro. Serve with a squeeze of lime! Enjoy!
