Grilled Chimichurri Chicken Drumsticks, Potatoes & Broccoli

Chimichurri is an Argentinian condiment – an uncooked sauce made of fresh herbs, garlic and a bit of spice – that can stand in for a marinade or top just about any meat or vegetable, before or after cooking. Once you master this quick technique, you’ll be riffing on your own chimi sauces and whipping up quick, intensely flavorful meals in no time!

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Preheat grill or oven to 400ºF. Wash and dry all produce. Cut broccoli into florets. Cut potatoes in half. Remove stems from oregano and discard; leave leaves whole. Remove stems from parsley and discard; leave leaves whole. Remove chicken drumsticks from package; rinse and pat dry.

Step 2: MAKE CHIMICHURRI

Place cilantro, parsley, garlic, oregano, red wine vinegar, red pepper flakes, honey, 4 Tbsp. oil and a pinch of salt and pepper in food processor or blender. Pulse 1-2 min until incorporated and smooth. Note: If you don't have a food processor or blender, simply mince cilantro, garlic, parsley and oregano together until very fine. Then combine with red wine vinegar, red pepper flakes, honey, 4 Tbsp. oil and a pinch of salt and pepper in a small bowl.

Step 3: PREP CHICKEN & POTATOS

Place drumsticks, potatoes, half of the chimichurri sauce, and a pinch of salt and pepper in a large bowl. Toss until evenly coated.

Step 4: GRILL CHICKEN & POTATOES

Place drumsticks and potatoes on hot, lightly oiled grill and cook 8-10 min per side flipping every 5 minutes until charred and fully cooked. Note: If not using a grill, cook the drumsticks and potatoes in a medium sauté/grill pan with 1 Tbsp. of oil over medium heat. Add drumsticks and potatoes to sauté pan and sear over medium heat for 3-4 min per side until golden brown; then, transfer to oven and bake for 15-20 min until fully cooked. The USDA recommends cooking chicken to an internal temperature 165ºF.

Step 5: GRILL BROCCOLI

When drumsticks have 5 min remaining, toss broccoli with 1 tsp. oil and a pinch of salt and pepper. Add to hot grill and cook 1-2 min per side until lightly charred and al dente. Note: If not using a grill, toss broccoli with 1 tsp. oil and a pinch of salt and pepper. Add to saute or grill pan and cook 3-5 min until al dente.

Step 6: PLATE YOUR DISH

Divide potatoes, broccoli and drumsticks between two plates and serve with remaining chimichurri sauce. Enjoy!
