Cheesy Late-Summer Tomato Chicken Tacos

Tender grilled chicken, cheesy mozzarella tacos topped with late-summer tomato salsa.

These are the tacos of the fall. Why? Because they have melted cheese and warm fall seasonings to bring our favorite seasons into perfect harmony! This late summer tomato salsa because it reminds us of the last of summer produce and the flavors of the up coming fall. Tomatoes are super sweet right now and perfect for salsa! The best way to enjoy these is on a chilly evening with a cozy sweater in a patio with your family or friends!

Ingredients
Italian seasoning
Corn tortillas
Sherry vinegar
Thyme
Cherry Tomatoes
Red onion
Chicken breast
Mozzarella cheese

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Preheat grill or oven to 400ºF. Wash and dry all produce. Cut cherry tomatoes into quarters. Remove thyme leaves from stem and discard stems. Peel then julienne red onion. Remove chicken from package; rise and pat dry.

Step 2: MAKE SALSA

Mix cherry tomatoes, onion, sherry vinegar, thyme, 4 Tbsp. oil and a pinch of salt and pepper to taste in medium bowl until incorporated. Set aside to marinate.

Step 3: PREP CHICKEN

Rub chicken with Italian seasoning,1 tsp. oil and a pinch of salt and pepper.

Step 4: GRILL CHICKEN

Place chicken on very hot, lightly oiled grill or sauté pan over medium-high heat with 1 tsp. oil. Sear 4-6 min per side until charred and fully cooked. Remove from grill or pan, place on a cutting board and cut into thin strips. USDA recommends cooking chicken to an internal temperature 165ºF.

Step 5: MELT CHEESE

Place tortillas on a baking sheet. Place a couple chicken strips on each tortilla and top with a little mozzarella. Place baking sheet back on grill and cover. Allow to cook 3-4 min to melt cheese and warm up tortillas. Alternatively, place tortillas in oven for 3-4 min to melt cheese and warm up tortillas.

Step 6: PLATE YOUR DISH

Place a couple tacos on each plate. Top with late-summer tomato salsa. Enjoy!
