Chicken and Dumplings

Tender chicken breast pieces and homemade dumplings with parsnips, leeks, carrots, green onions and thyme in a savory rich chicken broth.

ABOUT THE DISH

Dumplings are mounds of dough that are usually dropped into a liquid mixture, like a soup or stew, and cooked until firm. They can be made into all sizes, small or large.

Parsnips are in season during fall and winter. The first frost of the year converts the parsnips’ starch to sugar and give them their pleasantly sweet flavor.

Step 1: MISE EN PLACE

Read through entire recipe before beginning. Rinse and dry all produce. Peel and dice parsnips. Peel and dice carrots. Cut leek in half, rinse any dirt from between layers and slice. Slice green onion. Remove thyme leaves from stem and chop. Blend chicken broth base with 3 cups of water. Rinse chicken breasts with cool water and pat dry. Season with a pinch of salt and pepper.

Step 2: COOK THE CHICKEN

In a large sauté pan with high edges and a lid, heat 1 Tbsp oil on medium heat. Add chicken breasts to hot oil and sear on each side until brown and almost cooked through, 5 minutes on each side. Set chicken aside and remove any excess chicken fat from pan.

Step 3: COOK THE VEGETABLES

Melt butter into pan used for chicken over medium heat. Add leeks, parsnip and carrot to pan and sauté until carrots and parsnips begin to soften, about 12 minutes. Add flour and thyme to the sauteed vegetables and stir to incorporate.

Step 4: MAKE THE DUMPLINGS

Place dumpling mix in a mixing bowl. With a fork, blend half and half into dry mix until just blended. Use a large spoon to scoop out dumplings and arrange into several mounds over chicken mixture.

Step 5: COOK THE CHICKEN AND DUMPLINGS

Simmer chicken and dumplings, covered, for 8-10 minutes until dumplings are done. Dumplings are finished cooking when a toothpick inserted in the center comes out clean. Season with any salt and pepper to taste.

Step 6: PLATE YOUR DISH

Split chicken and dumplings between two dishes and top with Grana Padano cheese.
