Creamy Beef & Mushrooms with Mafaldine Pasta

Tender, fresh mafaldine pasta cooked with a ground beef and mushroom cream sauce, stroganoff-style, with a kick of Worcestershire and sherry.

This is one of those meals that you are simply are not going to be able to have enough of. This hearty bowl of fresh pasta brings forward classic, old time Minnesotan flavors and highlights them with a kick of sherry and Worcestershire sauce. Topped with fresh parsley, this cozy favorite will make you want to cuddle up with a good movie.

Ingredients
Flour
Sherry wine
Worcestershire sauce
Cremini mushrooms
Garlic
Parsley
Grass fed ground beef
Malfaldine pasta

Mince To cut a food into very small pieces.
Simmer To stew gently below or just at boiling point.
Sauté “To jump”. To fry in a small amount of fat at high heat.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Bring 4 quarts of salted water to a boil in a large pot. Wash and dry all produce. Cut cremini mushrooms into thin slices. Mince or grate garlic. Rough chop parsley leaves and stems. Remove ground beef from package; pat dry.

Step 2: COOK BEEF

Heat 1 Tbsp. oil in a medium sauté pan over medium heat. Add ground beef and a pinch of salt and pepper. Cook - breaking apart with a spoon or spatula - until done, about 5-8 min. The USDA recommends cooking beef to an internal temperature of 160ºF.

Step 3: COOK PASTA

Add mafaldine pasta to boiling water; cook at a rolling boil for 90 seconds until pasta is al dente (follow package directions). Reserve 1 cup pasta water, then drain well and set aside. Begin making the sauce (Step #4).

Step 4: MAKE SAUCE

Add flour, cremini mushrooms and garlic to ground beef and sauté 3-4 min until mushrooms have softened. Add sherry to deglaze pan; then, add half & half, 1 cup pasta water, Worcestershire and a pinch of salt and pepper. Bring to a simmer and cook simmering for 8-10 min until sauce has reduced to one third.

Step 5: FINISH PASTA

Add mafaldine pasta, Parmesan cheese and parsley. Toss until well incorporated and cheese has melted.

Step 6: PLATE TOUR DISH

Divide pasta between two bowls. Enjoy!
