Creamy Hummus Bowl with Crispy Shiitakes and Summer Vegetables with Garlicky Harrisa Vinaigrette

Super creamy hummus from Holy Land topped with crispy shiitake mushrooms and summer veggies tossed in a harissa vinaigrette served with warm pita.

Harissa is a delicious condiment made from spicy red peppers, garlic and seasonings all ground into a paste. It makes a great marinade for meats but in this recipe we thinned it out and made a vinaigrette to toss all the delicious crisp vegetables in the salad. The spicy harissa pairs well with the creamy chickpea hummus from Holy Land Bakery in NE Minneapolis.

Step 1: MISE EN PLACE

Read through entire recipe before getting started.Wash and dry all the produce. Heat oven to 450º. Shave carrots with peeler. Remove core and stem from the cucumber. Cut cucumber in half and in half again, forming quarter moons then thinly slice. Thinly slice radishes. Remove stems from shiitakes. Cut Shiitakes in half. Rough chop cilantro.

Step 2: CRISP THE SHIITAKES

Toss shiitakes in 1 Tbsp. of oil, salt and pepper. Place in the oven and roast until crispy, about 10 minutes.

Step 3: MAKE VINAIGRETTE

In a small bowl whisk the garlicky harissa vinaigrette with 2 Tbsp. of oil and a pinch of salt and pepper.

Step 4: MAKE THE SALAD

In a small bowl mix carrot shavings, cucumber, radish and cilantro. Toss the salad mix with the garlicky harissa vinaigrette and set aside.

Step 5: WARM THE PITA

Wrap pita in foil and place in hot oven for about 3 minutes or until warm. Cut into fourths.

Step 6: PLATE YOUR DISH

Divide hummus between two bowls and spread it with the back of a spoon forming a dent. Fill the dent with crispy shiitakes and top with harissa-cucumber salad and enjoy with pita.
