Chipotle Steak Fajitas

The classic Tex-Mex dish of marinated strips of steak with yellow onion, red pepper, poblano pepper and cilantro in a tortilla.

ABOUT THE DISH

Fajitas are a classic Tex-Mex dish. They can be served with any kind of meat or seafood, but classically they are made with steak.  The word “faja” is Spanish for strip or belt, denoting the strips of beef and vegetables used in making the dish.

Step 1: MARINATE THE STEAK

Read through entire recipe before getting started. Cut lime in half and juice half; slice the other half into wedges. Mince or grate garlic. Remove top sirloin steak from package; pat dry. Slice steak against the grain into thin strips. In a medium bowl, mix garlic, Worcestershire sauce and lime juice with 1 Tbsp oil. Add steak to bowl, and stir to coat well with marinade. Let sit for 15 min.

Step 2: MISE EN PLACE

Move oven rack to middle position and set oven to broil on high. Wash and dry all produce. Peel and julienne onion. Remove stem and seeds from red pepper and julienne. Remove stem and seeds from poblano and julienne. Remove cilantro leaves from stem and chop.

Step 3: BROIL THE VEGETABLES

On a foil-lined baking sheet, combine red pepper, poblano and onions. Add 1 Tbsp. oil and season with a pinch of salt and pepper. Place in oven and broil for 10-12 min mixing half way through. Broil temps may vary from oven to oven so keep an eye on them. You’re looking for nicely browned, with a few charred tips.

Step 4: BROIL THE FLATIRON STEAK

Wait until vegetables are finished broiling to start steak. Remove steak from marinade and place directly on top of vegetables; broil for 8-10 min to char slightly. Remove pan from oven and pour off any excess juice. Be careful! Pan will be HOT! Add taco seasoning to steak and vegetables; toss well to coat.

Step 5: WARM THE TORTILLAS

Wrap tortillas in foil, and place in oven next to steak and vegetables. When steak and vegtetables are done pull out tortillas.

Step 6: PLATE YOUR DISH

Divide steak and vegetables equally between all tortillas; top with cilantro and drizzle with Isabel Street Heat Chipotle hot sauce and a squeeze of lime. Enjoy!
