Garbanzo, Grape Tomato & Cucumber Salad with Vegan Feta

Bright and tangy garbanzo bean, cherry tomato and cucumber salad with parsley, dill and lemon vinaigrette.

Garbanzo beans, also known as chickpeas, are a fantastic source of fiber, protein, and numerous vitamins and minerals – perfect for a meat-free meal. And we’re introducing another amazing vegan product from our friends at Herbivorous Butcher – vegan feta cheese – made from almonds, and absolutely delish. This salad is the perfect bowl of summer, if we do say so ourselves!

Zest The peel of, or grating of a citrus peel for flavor.
Marinate Is the process of soaking foods in a seasoned, often acidic, liquid before cooking.  It was derived from the brining process.
Vinaigrette A type of salad dressing consisting of a vinegar and oil usually needing to be mixed or stirred before serving.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Remove ends from cucumber and small dice. Cut cherry tomatoes into quarters. Remove parsley leaves from stem and discard; then, rough chop. Remove dill leaves from stem and discard; then, rough chop. Peel, then small dice shallot. Zest lemon; cut in half and then juice. Drain garbanzo beans and rinse well.

Step 2: MAKE VINAIGRETTE

Place 1 ½ Tbsp. lemon juice, 1 tsp. lemon zest, 3 Tbsp. oil, parsley, dill, shallot and a pinch of salt and pepper in a medium mixing bowl. Mix until incorporated.

Step 3: ADD VEGETABLES

Add cucumber, tomatoes and garbanzos.

Step 4: TOSS SALAD

Mix until incorporated; then, allow to sit for 3-4 min to marinate flavors, toss and allow to sit 4-5 min again.

Step 5: FINISH SALAD

Break vegan feta into pieces using both hands. Sprinkle over salad.

Step 6: PLATE YOUR DISH

Divide salad between two plates. Enjoy!
