Grilled Chicken Thighs with Peanut Sauce & Garlic Snow Peas

Tamari marinated and grilled chicken thighs topped with peanut sauce, sesame seeds, scallions and served over sticky rice with sautéed garlic snow peas.

Don’t be afraid of a little char! The process of deeply caramelizing foods on the grill (or in the pan) adds incredible flavor…not to mention those cheffy grill marks. Resist the urge to move foods around until they’ve had a chance to sit for 3-4 minutes to crisp and develop great color before you move on. We’ve taken these chicken thighs to the next level with a tamari marinade and paired them with garlicky snow peas and a classic peanut sauce for extra oomph.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Preheat grill to 400ºF, if using. Wash and dry all produce. Remove root ends from scallions and discard; then, bias slice. Thinly slice garlic. Remove chicken thighs from package; rinse and pat dry.

Step 2: MARINATE THE CHICKEN

Place chicken thighs, half of the sweet tamari sauce and a pinch of salt and pepper in medium bowl or zip top bag. Mix to coat chicken; set aside.

Step 3: COOK RICE

Place sushi rice, 1½ cups water and a pinch of salt and pepper in small pot over medium heat. Bring to boil; cover and reduce heat to low. Cook 15-20 min until tender. Fluff with fork. While sushi rice is cooking, begin grilling chicken (Step #4).

Step 4: GRILL CHICKEN

Season chicken with a pinch of salt and pepper. Add to hot grill or if using sauté or grill pan, heat 1 tsp. oil over medium-high heat until very hot. Add chicken to hot grill or pan and sear for 2-3 min per side until fully cooked. While chicken is cooking, begin sautéing snow peas and mixing peanut sauce (Step #5). Note: The USDA recommends cooking chicken to an internal temperature 165ºF.

Step 5: COOK SNOW PEAS

Place peanut butter, remaining sweet tamari sauce, 2 Tbsp. water and a pinch of pepper in small bowl mixing until incorporated and smooth; set aside. Heat 1 tsp. oil in a medium sauté pan over medium heat. Add garlic and sauté 1-2 min until soft. Add snow peas, a pinch of sesame seeds, salt and pepper and sauté 2-3 min until lightly cooked.

Step 6: PLATE YOUR DISH

Divide rice between two plates; add chicken and snow peas alongside. Top chicken with peanut sauce, scallions, and remaining sesame seeds. Enjoy!
