Pork Chops with Radicchio Wheat Berry Salad

Hidden Stream Farm’s pork chops over wilted radicchio, cashew and wheat berry salad with Salad Girl’s curry & fig dressing.

Juicy marinated pork chops top this whole grain & savory greens salad.  Wheat berries are high in protein and have a versatile flavor, making them a hearty addition to all kinds of soups and salads.

Cooking terms for this recipe

Julienne To slice into thin strips about the size of matchsticks.

Step 1: MARINATE THE PORK

Read through entire recipe before getting started. Mince or grate the garlic. Remove thyme leaves from stem, chop. Remove pork chops from package; rinse and pat dry. Combine pork chops, garlic and thyme in a medium bowl with 1 Tbsp. of oil. Mix well to coat chops; cover and leave out at room temp.

Step 2: MISE EN PLACE

Add wheat berries and 2 cups water to a small pot. Bring to a boil, reduce to a simmer and cook for 40 min until wheat berries are cooked through; If all your water cooks off before wheat berries are done, an additional 1 cup water to finish cooking; drain off any excess water. When fully cooked wheat berries still have a nice bite to them unlike rice which is soft. While wheat berries are cooking move on to mise en place (Step #3).

Step 3: COOK THE WHET BERRIES

Wash and dry all produce. Rough chop parsley leaves and stems. Remove roots from the green onions and leave whole. Julienne radicchio. Rough chop the cashews.

Step 4: GRILL OR SEAR THE PORK CHOPS

Heat 1 Tbsp. oil in a medium sauté pan over medium heat. Season chops with a pinch of salt and pepper; add to hot pan and sear for 3-4 min on each side. Add green onions to pan and lightly char 1-2 min. Remove pork chops and onions from pan and set aside. Cut onions into large pieces. Wrap pork in foil to keep warm. USDA recommends cooking pork to an internal temperature of 145ºF.

Step 5: ASSEMBLE THE SALAD

In the same pan used for pork, heat 1 tsp. oil. over medium heat. When pan is hot, add raddichio and sauté 1 min until wilted. Add cooked wheat berries, parsley, cashews, curry & fig dressing and spring onions. Toss to combine.

Step 6: PLATE YOUR DISH

Divide the wheat berry salad between two plates. Top with seared pork chops. Enjoy!
