ABOUT THE DISH

You know how we love a quick and delicious rice bowl. To make this one extra tasty, we used crushed pineapple, tamari and ketchup to make a sweet Hawaiian barbeque sauce, giving this dish the perfect balance of sweet, salty and tangy!

Step 1: COOK THE RICE

Read through entire recipe before getting started. Combine rice with 1½ cups water in a small pot with lid over medium heat. Bring to boil; reduce to simmer. Cook 20-25 min until water has been absorbed. Remove from heat and keep covered. Fluff rice with a fork before serving. While rice is cooking move on to mise en place (Step #2).

Step 2: MISE EN PLACE

Wash and dry all produce. Peel carrot, then shred with a grater. Remove root from green onions and discard; bias slice into ½” pieces. Remove chicken from package; rinse and pat dry.

Step 3: SEAR THE CHICKEN

Heat 1 Tbsp. oil in large sauté pan. Add chicken and sear until lightly golden and cooked through about 5-7 min. Remove from pan and set aside. USDA recommends cooking poultry to an internal temperature of 165ºF.

Step 4: MAKE THE SAUCE

Using the large sauté pan again, whisk together ketchup, pineapple, brown sugar, and tamari over medium heat. Simmer 2-4 min until beginning to thicken.

Step 5: FINISH THE CHICKEN

Return chicken to pan; cook 2-3 min stirring constantly. Remove from heat; add green onions and give one final stir to slightly wilt onions.

Step 6: PLATE YOUR DISH

Divide sticky rice between two bowls. Add chicken and plenty of sauce. Top with carrots and sesame seeds. Enjoy!
