ABOUT THE DISH

Caramelized fennel compote adds a sweet and savory balance to the creamy mashed potatoes and the herb-infused pork chops. Fennel is made sweet through a prolonged cooking process caramelizing the natural sugars and adding a rich, deep flavor.

Large oven-safe sauté pan with lid

Step 1: MISE EN PLACE

Read though entire recipe before getting started. Preheat oven to 450ºF. Wash and dry all produce. Cut fennel into quarters and thinly julienne. Mince or grate garlic. Remove root from scallions and mince. Dice potatoes into 1” cubes. Remove pork chops from package; rinse and pat dry.

Step 2: SEAR PORK CHOPS

Heat 2 pats of butter in large oven-safe sauté pan over medium heat. Season pork chops on both sides with pork spice blend and a pinch of salt and pepper. Sear in hot pan 2 min on each side. Remove from pan and set aside. Pork chops will not be fully cooked at this point. While pork chops are cooking start caramelizing the fennel (Step #3).

Step 3: CARAMELIZE FENNEL

Using the sam sauté pan add fennel and 2 tsp. oil to pan, still over medium heat. Cover, cook for 15-20 min stirring occasionally until fennel softens and caramelizes. Add sugar and sherry vinegar; cook additional 5 min. While fennel is caramelizing; start cooking the potatoes (Step #3).

Step 4: COOK THE POTATOES

Add potatoes to a medium pot, add cold water to cover by 2”. Cover, bring to a boil and cook for 8-10 min until tender when pierced with a fork or knife. Remove from heat; drain well and place potatoes back into pot.

Step 5: FINISH POTATOES

Add sour cream, scallions, and remaining butter to potatoes; mash with potato masher, larger fork or whisk.

Step 6: PLATE YOUR DISH

Divide mashed potatoes between two plates. Serve pork chops on the side topped with caramelized fennel compote. Enjoy!
