Herb Marinated Pork Chops with Caramelized Fennel Compote & Scallion Mashed Potatoes

Caramelized fennel compote adds a sweet and savory balance to the creamy mashed potatoes and the tender pork chops. Fennel is sweetened through a prolonged cooking process which caramelizes the natural sugars and adds a rich, deep flavor.

Step 1: MISE EN PLACE

Read though entire recipe before getting started. Preheat oven to 450ºF. Wash and dry all produce. Cut fennel into quarters and thinly julienne. Mince or grate garlic. Remove root from scallions and mince. Dice potatoes into 1” cubes. Remove pork chops from package; rinse and pat dry.

Step 2: SEAR PORK CHOPS

Heat 2 pats of butter in large oven-safe sauté pan over medium heat. Season pork chops on both sides with a pinch of salt and pepper. Sear in hot pan 2 min on each side. Remove from pan and set aside. Pork chops will not be fully cooked at this point.

Step 3: CARAMELIZE FENNEL

Using the same sauté pan add fennel and 2 tsp. oil to pan, still over medium heat. Cover, cook for 15-20 min stirring occasionally until fennel softens and caramelizes. Add sweet sherry vinegar; cook an additional 5 min. While fennel is caramelizing start cooking the potatoes (Step #3).

Step 4: COOK THE POTATOES

Add potatoes to a medium pot, add cold water to cover by 2”. Cover, bring to a boil and cook for 8-10 min until tender when pierced with a fork or knife. Remove from heat; drain well and place potatoes back into pot.

Step 5: FINISH PORK CHOPS & POTATOES

Nestle pork chops in sauté pan with caramelized fennel compote. Place pan in preheated oven and bake for 8-10 minutes until pork chops are cooked through. The USDA recommends cooking pork to an internal temperature of 145ºF.

Add sour cream, scallions, and remaining butter to potatoes; mash with potato masher, large fork or whisk.

Step 6: PLATE YOUR DISH

Divide mashed potatoes between two plates. Serve pork chops on the side topped with caramelized fennel compote. Enjoy!
