Poached in a honey-spiked liquid, these shrimp stay tender, fragrant and sweet to eat.  The kick of zippy Sriracha mayo, combined with the crunchy vegetables make this a perfectly balanced bowl.

Step 1: COOK THE RICE

Combine rice with 1¼ cups water in a small pot with lid. Cover and bring to a boil, then reduce heat and simmer for 20 min, until the water has been absorbed. Remove from heat and keep covered. Fluff rice with a fork before serving. While rice is cooking start your mise en place (Step #2).

Step 2: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Dissolve honey in 2 cups water. Stack bok choy leaves on top of each other and cut into 1” strips width-wise. Peel carrot, discard skins; continue peeling until you have nothing but ribbons. Shred radish. Remove shrimp from package and remove tails; rinse and pat dry.

Step 3: POACH THE SHRIMP

Bring honey-water to boil in small pot. Season with a pinch of salt and pepper. Add shrimp and poach until fully cooked, about 5-7 min. Remove shrimp from honey-water. Drain liquid; wash and dry pot.

Step 4: SAUTE BOK CHOY

Heat 1 tsp. oil in previously used pot. Add bok choy and sauté until soft, about 2-3 min.

Step 5: ASSEMBLE THE RICE BOWL

Divide rice between two bowls. Top with sautéed bok choy, shrimp, carrots and radish.

Step 6: PLATE YOUR DISH

Drizzle each bowl with Sriracha mayo and garnish with sesame seeds. Enjoy!
