Tamari Wasabi Tuna Skewers with Cilantro Rice

Tamari wasabi marinated ahi tuna skewered with juicy mango, red pepper and scallions. Served with cilantro lime rice.

ABOUT THE DISH

Wasabi is a green leafy plant that grows along stream beds in Japan and is also know as Japanese horseradish.  Wasabi is made from the stem of the plant and is similar to hot mustard. It’s a great way to clear your sinuses if you’re feeling conjested!

Step 1: MARINATE THE TUNA

Read through entire recipe before beginning. Pre heat oven to 450ºF or fire up the grill to medium high. Remove the tuna from the package, rinse and pat dry. Cut the tuna into large chunks about 1.5 inches x 1.5 inches. In a medium bowl mix together the tamari wasabi sauce with the tuna, cover and place in the fridge to marinate until ready to use.

Step 2: MISE EN PLACE

Prepare the mango according to the mango prep card included in your bag. Soak the skewers in warm water until ready to use. Remove the stem and seeds from the red bell pepper and dice into 1 inch x 1 inch pieces. Remove the root of the scallions and bias slice into 1 inch long pieces. Remove the cilantro leaves from stem and chop. Zest the lime then cut in half and juice.

Step 3: COOK THE RICE

Rinse the rice under cool running water until the water runs clear. Add the rice to a small pot with 1 1/4 cup of water. Bring to a boil, reduce to a simmer, cover and cook for 15 minutes until the water is absorbed and rice is soft. Remove from the heat and set aside. While the rice is cooking move on to cook the skewers, step #4.

Step 4: ROAST OR GRILL SKEWERS

Assemble the skewers by alternating tuna, mango, red bell pepper, and scallion. Once the skewers are assembled drizzle generously with oil and place on a foil lined sheet pan or an oiled grill and cook for 10-12 minutes (oven) or 4-5 minutes per side (grill).

Step 5: FINISH RICE

In a small bowl add the rice, 1 tsp. lime juice, lime zest, 1 Tbsp. of oil, chopped cilantro and season with a pinch of salt and pepper.

Step 6: PLATE YOUR DISH

Divide the cilantro lime rice between each plate and place the skewers on top. Enjoy!
