Isadore Nut Rosemary Salmon with Butter Orzo & Broccoli

Tender, meaty Surrender Salmon topped with lemon-rosemary crust and soft buttery broccoli orzo.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Bring 6 cups water, with a pinch of salt, to a boil in a medium pot. Wash and dry all produce. Mince or grate garlic. Cut broccoli into florets. Remove rosemary leaves from tough stem and discard stem; then, mince leaves. Remove parsley leaves form stem and discard stems; then, rough chop leaves. Crush Isadore Nuts in a small bowl using the back of a glass or knife until broken down to small pieces. Remove salmon from package; rinse and pat dry.

Step 2: COOK ORZO

Add orzo to boiling water; cook at a rolling boil for 5-6 min until pasta is al dente. Drain well and set aside. While pasta is cooking, begin crusting the salmon (Step #3).

Step 3: CRUST SALMON

Season salmon with a pinch of salt and pepper. Place Isadore Nuts in a small bowl and mix with 1 Tbsp. oil, half garlic, parsley and rosemary and mix to incorporate. Once well incorporated top salmon with crusting mixture pressing down with the palm of your hand to secure the crust.

Step 4: COOK SALMON

Heat 1 Tbsp. oil in medium pan over medium heat. Add salmon and sear 4-5 min until skin is crispy and aromatic. Cover and cook another 3-4 min until salmon Is cooked to desired doneness. USDA recommends cooking salmon to an internal temperature of 145ºF.

Step 5: FINISH ORZO

Heat 1 tsp. oil in pot used to cook the orzo. Add garlic and sauté 1-2 min until softened. Then, add orzo and broccoli. Sauté all together for 3-5 min until incorporated and broccoli is fully cooked. Season with half parsley and half rosemary.

Step 6: PLATE YOUR DISH

Divide orzo between two bowls. Top each bowl with one crusted salmon fillet. Enjoy!
