Italian Sausage Calzone with Garlicky Green Beans

Here’s a quick fix for a weeknight! We use True Dough’s locally made whole wheat dough to create a super-fast, tender calzone stuffed with Italian sausage, cheese and sauce. With green beans on the side, you’ve got a healthy meal in no time.

Step 1: MISE EN PLACE

Read entire recipe before getting started. Preheat oven to 425ºF. Trim green beans if necessary. Mince or grate garlic. Rough chop almonds. Leave dough ball out at room temperature.

Step 2: SEAR THE SAUSAGE

Heat 1 tsp. oil in a large sauté pan over medium heat. Add Italian sausage and sauté 6-8 min until sausgage is crispy and cooked through. Remove from pan and place on a papertowel lined plate to drain. While the sausage is searing start prepping the dough (Step #3). USDA recommends cooking sausage to an internal temperature of 145ºF.

Step 3: PREP THE DOUGH

Dust a flat, solid surface with a pinch of dusting flour. Set dough ball in flour and roll flat into a 10-12” circle 1/4” thick. Combine cooked sausage with, mozzarella cheese and three-quarters of the pomadorina sauce in a medium bowl and mix well.

Step 4: MAKE THE CALZONE

Place filling on the bottom third, in the center, of the dough. Brush the edge of dough with water, then fold the top of dough over the filling to meet the bottom. Press firmly along the edges where the dough meets ensuring a good seal. Carefully transfer the calzone onto a foil-lined baking sheet; place in oven and bake for 20-25 min until dough is golden and cooked through.

Step 5: SAUTE GREEN BEANS

Note: Start green beans when calzone has about 10 min of cook time left. Heat 1 Tbsp. oil in a large sauté pan over medium heat. When hot, add green beans and sauté for 4-5 min until bright green and lightly chard in some spots. Add almonds and garlic and sauté 2 more min. Remove pan from heat.

Step 6: PLATE YOUR DISH

Serve green beans family style in a large bowl. Slice calzone however you like and serve with remaining Pomadorina sauce. Enjoy!
