Italian Sausage & Lasagnetta in Apple Walnut Cream Sauce

Sunrise Gourmet’s Lasagnetta pasta, pork sausage, spinach, shallot and garlic in a creamy nutmeg & cinnamon sauce with caramelized apples and toasted chopped walnuts.

Lasangnetta
Mild Italian sausage
Apple
Walnuts

Step 1: MISE EN PLACE

Read through entire recipe before beginning. Rinse and dry all produce. Keep half & half out to come up to room temperature. Thinly slice garlic. Roughly chop the walnuts. Zest the lemon, then cut in half and juice. Remove the core and seeds from the apple then dice. Place the diced apple into a small bowl of water with 1 tsp. of lemon juice to keep them from browning. Peel and dice the shallot. Bring 6 cups of salted water to a boil in a medium pot.

Step 2: COOK THE SAUSAGE

Remove the sausage from the package. Heat 1 tsp. of oil in a medium sauté pan over medium heat. When hot, add the ground Italian sausage and cook for 5-6 minutes, breaking apart with a wooden spoon as it cooks. Using a slotted spoon, remove the sausage from the pan and set aside. Discard the rendered fat.

Step 3: TOAST THE WALNUTS

In the same pan you cook the sausage, over medium heat, add the walnuts and toast for 1-2 minutes making sure to stir or toss continuously to prevent burning. Remove from pan and set aside in a small bowl. Drain the apples very well and pat dry. Add 1 tsp. of oil to the pan, still over medium heat, then add the apples. Cook for 5 minutes until the apples start to brown. Remove from the pan and combine with the walnuts.

Step 4: COOK THE PASTA

Add the lasagnetta to the boiling water and cook for 8-10 minutes until al dente. Drain well. While the lasagnetta is cooking start to make the sauce (step #5)

Step 5: MAKE THE SAUCE

In the same medium sauté pan over medium heat, add the butter. When melted, add the shallots and garlic and sauté until soft and fragrant, 1-2 minutes. Add in the walnuts, apples, cream, spice blend and sausage. Simmer until the cream thickens slightly. Add the spinach, 1 tsp of lemon juice and a pinch of lemon zest. Season with a pinch of salt and pepper. Mix well to incorporate and take off heat.

Step 6: PLATE YOUR DISH

Divide the lasagnetta between two bowls. Divide the sauce between each bowl and Enjoy!
