ABOUT THE DISH

This dish is a family favorite at the Local Crate test kitchen! Linguine pasta is wide, flat and thin. In italian, linguine means “little tounges” and is usually used with seafood in bright flavorful dishes. This vibrant meal will make your pallate take a trip from your kitchen to the italian shores!

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Zest and lemon cut in half and juice. Chop parsley leaves and stems. Slice cherry tomatoes in half. Mince shallot. Mince or grate garlic. Bring 6 cups salted water to a boil in a medium pot. Remove shrimp from package, rinse, pat dry and remove tail shells. Season shrimp with salt and pepper.

Step 2: COOK PASTA

Add linguine to boiling water. Stir to avoid sticking and cook for 8-10 min or until al dente. Drain and set aside when done.

Step 3: MAKE SAUCE

Heat 2 Tbsp. oil and butter pats in large pan over medium heat. Add shallots and garlic. Cook until translucent, about 3-4 min. Add white wine, cook until liquid has reduced to half, about 1-2 min. Season with salt and pepper.

Step 4: COOK SHRIMP

Add shrimp to reduction, cook for 3-4 min stirring constantly, until pink, firm, and fully cooked. USDA recommends cooking shrimp to an internal temperature of 145ºF.

Step 5: FINISH PASTA

Add linguine to cooked shrimp and toss well. Add cherry tomatoes, lemon zest, lemon juice and parsley. Toss until incorporated. Cook for 2-3 min.

Step 6: PLATE YOUR DISH

Divide pasta evenly between two plates, enjoy!
