Lemongrass Chicken Rice Bowl

Seared chicken, lemongrass, green onion and cilantro stir-fried in a sweet & slightly spicy Vietnamese style sauce.  Served over sushi rice.

ABOUT THE DISH

Lemongrass is an herb that is widely used in Asian cuisine. It has a subtle citrus flavor that can be used to flavor soups, teas, and sauces. It is extremely versatile and can be used with all kinds of meats and seafood. It can be purchased fresh or even used dried and powdered.

Ingredients
Lemongrass
Rice Wine
Sambal
Cilantro
Vietnamese stir-fry sauce
Sushi rice

Bias (cut) Diagonal slice
Stir-Fry To fry something over high heat quickly (with little oil) while stirring constantly.
Simmer To stew gently below or just at boiling point.

Step 1: MISE EN PLACE

Remove hard outer leaves of the lemongrass then mince. Thinly slice garlic. Chop cilantro leaves. Remove root from green onion and bias slice. Remove chicken from package, rinse and pat dry. Cut into thin strips lengthwise then cut the strips in half crosswise.

Step 2: COOK THE RICE

Place the rice into a colander or strainer and rinse under cool water until the water runs clear (see Chef’s Tip). Plcace the rice into a small pot. Add 1.5 cups of water and bring to a boil. Once boiling, reduce to a simmer and cover. Cook for approximately 15 minutes until the water has absorbed and the rice is soft to the bite.

Step 3: SEAR THE CHICKEN

In a large sauté pan on medium high heat add 1 Tbsp of oil. While the pan is heating up season the chicken slices with a pinch of salt and pepper. Add chicken to the hot pan and stir-fry for 3-4 minutes until lightly browned. Remove from pan and set aside.

Step 4: MAKE THE SAUCE

In the same pan that you cooked the chicken, over medium high heat, add 1 Tbsp. of oil. Add the lemongrass and garlic and stir-fry for 1-2 minutes until soft and fragrant. Add the rice wine to deglaze the pan along with the sambal, green onions and stir fry sauce. Bring to a slight boil, add chicken back in to warm through, reduce for 1-2 minutes then remove from heat and toss in cilantro.

Step 5: PLATE YOUR DISH

Divide the rice between two bowls. Add half of the lemongrass chicken to each bowl. Enjoy!

Step 6: CHEF's TIP

There are a few reasons for rinsing your rice before you cook it and its not the case for all types of rice. For sushi rice, rinsing removes excess starch from the rice grain. Which helps promote even cooking and keeps the grains of rice from clumping together.
