ABOUT THE DISH

Mojo is a staple condiment in cuban cuisine made from lime or orange juice, cumin, garlic and oil. This versitle sauce can be used for a marinade or dipping sauce. It has tons of flavor and really brighten ups a dish.

What you need

2 small mixing bowls

2 large sauté pans

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Chop cilantro leaves and stems. Peel and dice shallot. Mince or grate garlic. Slice potatoes into ¼” thick slices. Zest lime, cut in half and juice. Slice tomatoes in half. Remove pork chops from package, rinse and pat dry.

Step 2: MAKE THE MOJO

Combine 3 Tbsp. lime juice, sugar & cumin, oregano, ½ the garlic and ¼ cup oil in a small bowl. Mix well, cover and set aside.

Step 3: MAKE PICO DE GALLO

Combine, tomatoes, cilantro, lime zest, 1 Tbsp. oil and a pinch of salt and pepper in a small bowl. Cover and set in fridge until ready to use.

Step 4: MAKE THE POTATOES

Heat ½ cup oil in medium sauté pan over medium high heat. Carefully add thin sliced potatoes to hot oil. Fry for 2-3 minutes per side. Remove from pan placing on a paper towel to drain. Season with salt and pepper. Repeat until all potatoes are fried. Add more oil if needed. While the potatoes are frying start searing the pork chops (step #5).

Step 5: SEAR PORK CHOPS

Heat 1 Tbsp. oil in a medium sauté pan over medium heat. Season pork chops with a pinch of salt and pepper. Place in pan, searing for 2-3 min per side. Turn off heat and leave in pan to stay warm while you finish the potatoes.

Step 6: PLATE YOUR DISH

Shingle the potatoes in a circle on each plate. Drizzle with the mojo sauce. Place pork chop on top of potatoes and top with pico and drizzle with a little more mojo. Enjoy!
