Peanut Lime Shrimp with Ginger Tamarind Roasted Vegetables

Seared garlic shrimp in a zesty peanut sauce. Served with vegetables roasted in a tamarind honey sauce and sushi rice.

Tamarind is a sticky, sour-tasting fruit in the legume family. The tamarind tree is common all over Asia and in Mexico.  Tamarind paste is the fruit, with seed removed, made ready to cook. The paste is quite strong and should have some kind of sugar added to it to make it more palatable (it is quite sour).

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Preheat your oven to 400ºf. Rinse and dry all produce. Peel and large dice or wedge the red onion. Peel and large dice the carrot. Half the wedge the potatoes. Peel ginger then grate. Zest the lime, cut in half and juice.

Step 2: ROAST THE VEGETABLES

Mix together the tamrind honey sauce with the grated ginger and half of the minced garlic. In a large mixing bowl toss with the potatoes, carrots, and red onion making sure to coat well. Place the vegetables on a foil lined sheet pan and roast in the oven for 35-40 minutes. While the vegetables are roasting move on to cooking the rice (step #3).

Step 3: COOK THE RICE

Rinse the rice under cool running water until the water runs clear. This removes excess starch. In a small pot combine the rice with a cup of water. Bring to a boil then reduce to a simmer, cover and cook for 15-20 minutes until the rice is soft and the water has been absorbed. When done remove from the heat and leave covered.

Step 4: MAKE THE SAUCE

In a small mixing bowl combine the tamari, brown sugar, peanut butter, lime zest and lime juice. Mix until smooth and set aside.

Step 5: SEAR THE SHRIMP

In a medium sauté pan on medium heat add 1Tbsp. of oil. In the same bowl you tossed the vegetables. toss the shrimp with a pinch of salt and pepper and add in the remaining garlic. When the pan is hot add the shrimp, searing on each side for 1-2 minutes until they are pink, opaque and firm. Remove from heat and add in the peanut sauce and green onions mixing well.

Step 6: PLATE YOUR DISH

Divide the rice between two bowl then top with roasted vegetables then seared shrimp and drizzle with peanut sauce.
