Pork Fajita Salad with Chile Limón Vinaigrette & Crispy Tortilla Strips

Seared and seasoned pork chops sautéed with caramelized onions, bell peppers, and sweet corn all tossed with Salad Girl’s tangy and spicy chile limón vinaigrette and topped with crispy tortillas.

Fajitas are an iteration of a traditional Tex-Mex dish making clever use of non-traditional cuts of meat. Today, fajitas can be just about anything that’s cooked and rolled into a soft flour tortilla. This is our Local Crate riff on the traditional with a fun, summery twist.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Preheat oven to 400ºF. Wash and dry all produce. Remove stem and seeds from bell pepper, and slice into thick julienne strips. Peel and julienne onion. Stack tortillas, cut into quarters, and then slice into thin strips. Cut cherry tomatoes in half lengthwise. Trim base off romaine and rough chop. Shuck corn and cut kernels off cob. Remove cilantro leaves from stems. Remove pork chops from package, rinse and pat dry.

Step 2: MARINATE PORK

Slice pork chops into 1/4” strips and place in a small mixing bowl. Toss pork, 1 tsp. oil, taco seasoning, and a pinch of salt and pepper in a small mixing bowl. Coat well; cover bowl and set aside.

Step 3: MAKE TORTILLA STRIPS

Toss tortilla strips, 1 Tbsp. oil, and a pinch of salt and pepper in a small mixing bowl. Coat well; place on foil-lined baking sheet. Bake until golden brown and crisp, about 9 minutes.

Step 4: SEAR THE PORK

Heat 2 Tbsp. oil in a large sauté pan over medium heat. Add onion and corn cooking until soft, about 4 minutes. Push corn and onions to the side of pan. Add pork. Sauté until pork is fully cooked, about 5 min. Add bell peppers and mix to combine; remove from heat and allow peppers to soften in the hot pan.

Step 5: MAKE THE SALAD

Mix romaine and cherry tomatoes with chile limón vinaigrette in large salad bowl.

Step 6: PLATE YOUR DISH

Divide salad between 2 bowls. Top each salad with pork fajitas and crispy tortillas. Garnish with cilantro leaves. Enjoy!
