Pork Fried Rice

Traditional Asian comfort food with pan-fried sushi rice, seasoned diced pork, sautéed vegetables and a scrambled egg.

Fried rice is simply the perfect comfort food.  While there are hundreds of possible variations (limited only to what’s hanging out in your fridge), our version contains chunks of seasoned pork, fresh veggies and rice, with just a bit of egg scrambled in.

Cooking terms for this recipe

Chiffonade To finely slice vegetables or herbs. Best done by stacking the leaves and rolling, then slicing.
Bias slice Cutting or slicing on a diagonal angle
Sauté “To jump”. To fry in a small amount of fat at high heat.

Step 1: COOK THE RICE

Read through the entire recipe before getting started. In a small pot add rice and 1¼ cup water. Bring to a boil; reduce to a simmer and cover. Cook for 15-20 min until the water has been absorbed and rice is soft. Remove rice from the pan and spread out on a plate to cool. While rice is cooking start your mise en place (Step #2).

Step 2: MISE EN PLACE

Wash and dry all produce. Peel and dice carrot. Remove root from the green onion; discard root, then bias slice 1” pieces. Mince or grate garlic. Remove seeds and stem from red bell pepper and dice. In a small bowl, beat egg. Remove pork chops from package; rinse and pat dry, dice into small ¼ - ½” pieces.

Step 3: SEAR THE PORK

Heat 1 Tbsp. oil in a large sauté pan over medium-high heat. Pat pork dry once more and season with a pinch of salt and pepper. Add to the pan and sear on all sides, about 4-5 min. Remove from pan and set aside. The USDA recommends cooking pork to an internal temperature of 145ºF.

Step 4: SAUTE THE VEGETABLES

In pan use for pork, over medium heat, add 1 tsp. oil. When hot add carrots and sauté 3-4 min. Add garlic, green onions and red bell pepper and sauté for 2 min. Remove vegetables from the pan and set aside.

Step 5: FINISH THE RICE

In the same pan, over medium heat, and add 1 Tbsp oil. When hot add rice and spread out; don’t mix. Let rice cook for 4 min then scrape off bottom of pan. Add whisked egg to open side of pan and scramble. Add pork, vegetables and fried rice sauce; mix well to combine.

Step 6: PLATE YOUR DISH

Divide the fried rice between two bowls. Enjoy!
