Roasted Root Vegetable Poutine with Fried Egg

Crispy oven fries topped with Minnesota cheese curds, savory gravy, a fried egg and garnished with fresh parsley.

Poutine is a Canadian dish that originates in the province of Quebec. Poutine consists of fries and cheese curds topped with gravy. At the Local Crate test kitchen we came up with a way to give a vegetarian spin to a beloved classic.

Vegetable Broth Base
Parsley
Parsnip
Sweet potato
Gluten free flour

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Pre-heat oven to 475ºF. Wash and dry all produce. Cut potatoes in half; slice into 1/4” wedges. Peel parsnip; cut in half, and slice into 1/4” wedges. Cut sweet potato in half; slice into 1/4” wedges. Mince garlic. Mince Shallot. Crack eggs into bowl.

Step 2: MAKE THE FRIES

Place potatoes, sweet potatoes and parsnip on foil-lined baking tray. Drizzle with 1/4 cup oil, salt and pepper. Toss gently, bake until golden brown, about 25 min. While the fries are baking begin to make gravy (Step #3).

Step 3: MAKE THE GRAVY

Dissolve vegetable broth base in 1½ cups water, set aside. Melt 3 pats butter in small pan. Add shallot and garlic. Cook until browned, about 1-2 min. Add flour stirring with whisk to make roux. Cook for 2-3 min, add vegetable base stirring constantly. Cook until thickened, about 2-3 min. Remove from heat.

Step 4: FRY THE EGGS

Melt remaining 1 pat butter in small pan. Add eggs to pan one at a time and fry until the egg whites turn opaque, about 1 min. Season with salt and pepper. Reduce heat to low and cover with lid, cook for 2 min or until desired doneness is reached.

Step 5: FINISH THE FRIES

Remove fries from oven. Gently lift from baking sheet using spatula.

Step 6: PLATE YOUR DISH

Divide fries between two plates. Top with gravy and cheese curds. Place fried egg on top of each poutine. Garnish with parsley, enjoy!
