ABOUT THE DISH

Here in the test kitchen we are taking advantage of summer vegetables. We’ve tossed broccoli and charred sweet corn with cremini mushrooms, seasoned, seared chicken and fresh cavatappi pasta from Dumpling & Strand, all finished off with grated Grana Padano cheese.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Boil 4 cups salted water in a medium pot. Cut broccoli into florets. Mince or grate garlic. Shuck corn and cut kernels off cob. Peel and dice shallot. Slice cremini mushrooms in half without removing stems. Remove chicken breasts from package, rinse and pat dry.

Step 2: SEASON THE CHICKEN

Dice chicken breasts into 1” cubes and place in small mixing bowl. Toss chicken, 1 tsp. oil, Twin Cities Grub Rub and a pinch of salt and pepper. Cover bowl and set aside.

Step 3: SEAR THE CHICKEN

Heat 1 Tbsp. oil in large saute pan over medium heat. Add chicken, sear until browned on all sides, about 3 min. While chicken is searing, boil cavatappi pasta (step #4).

Step 4: COOK PASTA

Add cavatappi pasta to boiling water and cook until al dente, about 3 min. Drain pasta reserving 1/4 cup of pasta water. Set aside.

Step 5: FINISH THE CHICKEN

Add garlic, shallot and corn to chicken breasts. Sauté until browned, about 3-4 minutes. Add broccoli and cremini mushrooms, cook covered until slightly softened. About 2 min. Add 1/4 cup of pasta water, butter, pasta and half the Grana Padano. Toss until butter and cheese have melted.

Step 6: PLATE YOUR DISH

Divide pasta between two bowls and top with remaining Grana Padano. Enjoy!
