Ready for a new kind of rice?  Check out cauliflower rice – an easy-to-make base or side for any dish.  Once sautéed and lightly browned, it stands in for regular rice or fluffy couscous.  Here we keep it simple with juicy chicken and tender greens.

Cauliflower
Thyme
Garlic
Chicken breasts
Havarti cheese
Butter

Bias slice Cutting or slicing on a diagonal angle
Chiffonade To finely slice vegetables or herbs. Best done by stacking the leaves and rolling, then slicing.
Sauté “To jump”. To fry in a small amount of fat at high heat.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Trim stem from swiss chard, stack and roll leaves; chiffonade. Grate, finely chop, or use a food processor to turn cauliflower into small rice-sized pieces. Remove thyme leaves from stem; mince leaves. Mince or grate garlic. Grate Havarti cheese. Remove chicken breasts from package; rinse and pat dry.

Step 2: SEAR CHICKEN

Heat 2 pats butter in a large sauté pan over medium heat. Season chicken breasts on each side with a pinch of salt and pepper. When pan is hot, sear chicken for 4-5 min on each side until a nice golden crust has formed and chicken is cooked through. Remove chicken from pan and set aside. USDA recommends cooking poultry to an internal temperature of 165ºF.

Step 3: COOK CAULIFLOWER

Using the same pan as you cooked the chicken, melt 2 pats of butter over medium heat. Sauté cauliflower 1-2 min, cover and cook for 3 more min until tender.

Step 4: COOK SWISS CHARD

Slide cauliflower to one side of the pan. of pan. Add remaining butter, swiss chard and garlic; mix together.

Step 5: FINISH CHICKEN

Slide swiss chard over, add chicken back to pan. Top chicken with grated Havarti and thyme, cover; sauté for 3-4 min, until cheese has melted and swiss chard is slightly wilted.

Step 6: PLATE YOUR DISH

Divide swiss chard between two plates. Add caulilfower rice next to swiss chard. Bias slice chicken and lay on top of cauliflower. Enjoy!
