Seared Chicken with Cucumber Soba Noodle Salad

Thai seasoned chicken seared and sliced on top of soba noodles with crisp cucumbers, green onions, basil and mint, garnish with cilantro.

Soba, the Japanese name for buckwheat, is a thin noodle made from buckwheat flour. Despite its name, buckwheat is not wheat at all. The buckwheat plant is more closely related to sorrel and rhubarb. This makes Soba noodles a great gluten-free pasta choice.

Chicken breasts
Soba noodles
Green Onions
Cucumber
Basil
Cilantro
Mint
Thai Spice

Bias slice Cutting or slicing on a diagonal angle
Al Dente Literally “to the tooth”. Describes the ideal texture of cooked pasta that leaves it with a slight bite, rather than becoming mushy.
Zest The peel of, or grating of a citrus peel for flavor.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Wash and dry all produce well. Bring 6 cups of water to a boil, DO NOT ADD SALT. Remove root from the green onion and bias slice. Rip basil and mint into small pieces by hand. Remove cilantro leaves from stem and leave whole. Peel cucumber, cut in half lengthwise and scoop out seed. slice into half moons. Zest lime, cut in half and juice. Remove chicken breasts from the package, rinse and pat dry.

Step 2: COOK THE NOODLES

Add the soba noodles to the boiling water and cook for 6-8 minutes until al dente. Drain well and rinse with cold water then place the noodles in a medium bowl and cover with cold water. Set aside until ready to use.

Step 3: SEAR THE CHICKEN

In a medium sauté pan over medium heat add 1 Tbsp. of oil. Season each side of the chicken breasts with a pinch of Thai Spice. Place the chicken in the pan and sauté for 4-5 minutes on each side. Remove from pan and wrap in foil to keep warm. While the chicken is cooking move on to make the dressing, step #4.

Step 4: MAKE THE DRESSING

In a large mixing bowl combine the soba dressing with the lime juice and lime zest. Mix well to combine.

Step 5: FINISH THE NOODLES

Drain the soba noodles very well and add them to the same large mixing bowl that you made your dressing. Add the cucumber, green onions, basil and mint. Toss all of the ingredients together to coat with the dressing.

Step 6: PLATE YOUR DISH

Divide the noodle salad between 2 bowls. Slice or leave chicken whole and place on top of the noodles. Garnish with the cilantro. Enjoy!
