Seared steak with Buttered Cauliflower and Parmesan Potatoes

ABOUT THE DISH

Roasting vegetables simply with butter and herbs is the easiest way to get the best flavors out of them.  Soft, buttery garlic mixes beautifully with crisp, nutty cauliflower – sliced to give maximum exposure to the heat.  We finish with just a bit of cheese, herb, citrus to perfectly complement the sirloin steak.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Preheat oven to 425ºF. Wash and dry all produce. Smash garlic using the side of a knife or back of a pan until lightly crushed. Remove stem from zucchini, bias slice into thick, ½” pieces. Cut red potatoes into quarters. Zest lemon. Slice cauliflower head into steaks about ¾” thick. Cut butter pats in thirds. Remove sirloin steak from package; rinse and pat dry.

Step 2: PREP VEGETABLES

Place cauliflower flat on baking sheet, distribute potatoes, garlic, thyme and butter pats all around.

Step 3: ROASTE VEGETABLES

Roast from 10-12 min until golden; remove from oven. Flip, add zucchini pieces and sprinkle Parmesan cheese over vegetables. Roast another 10-12 min until Parmesan has melted and browned.

Step 4: SEAR STEAKS

Season steaks with salt and pepper. Heat 1 Tbsp. oil in medium sauté pan over medium heat. When hot, add steak and sear until golden on both sides, about 4-5 min per side. USDA recommends cooking steak to an internal temperature of 145ºF.

Step 5: FINISH VEGETABLES

Remove vegetables from oven sprinkle with lemon zest.

Divide vegetables between two plates, place steak next to veggies. Enjoy!
