Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Preheat oven to 425ºF. Wash and dry all produce. Mince or grate garlic. Remove thyme leaves from stem; discard stems and rough chop leaves. Cut a slice from the bottom part of each potato, creating a flat stable surface to work on. Remove the bottom end of asparagus, discard. Remove steak from package; rise and pat dry.

Step 2: MAKE HASSELBACK POTATOES

Place potatoes, flat-side down, on a cutting board. Slice each potato three-quarters of the way down and about an 1/8" thick; the thinner the better. Make sure not to cut all the way through the bottom of potato! Place potatoes in a oven-safe baking dish; rub each potato with 1 tsp oil, a pinch of salt and pepper. Cover baking dish with aluminum foil and place in the oven for 30 min. While potatoes are baking, begin making the brown butter (Step#3).

Step 3: MAKE BROWN BUTTER

Place butter, garlic and thyme in medium sauté pan over low heat. Cook until butter and garlic begin to brown, about 1-2 min. Remove from pan and set aside.

Step 4: SEAR STEAKS

In previously used pan heat 1 tsp. oil over medium heat. Season steaks with a pinch of salt and pepper and sear 3-4 min per side. Remove from pan and set aside. Add asparagus and sauté 3-5 min until tender. USDA recommends cooking steak to an internal temperature 145ºF.

Step 5: FINISH POTATOES

When potatoes are done, spoon brown butter on top of potatoes generously. Top with mozzarella cheese and bake uncovered 5 min until cheese has melted.

Step 6: PLATE YOUR DISH

Divide asparagus between two plates, add one potato and steak to each plate. Enjoy!
