Riffing on a steak house classic, this weeknight version highlights tender top sirloin with a high-low combination of gourmet toppings and rustic, wholesome mashed potatoes.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Wash and dry all produce. Mince or grate garlic. Rough chop parsley leaves and stems. Remove root and top from onion; peel and julienne. Cut cremini mushrooms in half. Cut red potatoes into quarters. Remove steak from package; rinse and pat dry.

Step 2: COOK POTATOES

Place potatoes in small pot covered by 2” of water over medium heat; add a pinch of salt. Bring to a boil, cook for 10-12 min until potatoes are tender. Turn off heat, strain potatoes, and return to pan. Add half the half & half; mash using a potato masher or fork until incorporated. Season with salt and pepper. While potatoes are cooking, begin caramelizing onions (Step #3).

Step 3: CARAMELIZE ONIONS

Heat 2 tsp. oil in medium pan over medium heat. Add onions and sauté until beginning to soften; about 3-4 min. Add red wine vinegar and reduce heat to medium-low. Cook until onions are soft and caramelized, about 8-9 min. Remove from pan and set aside.

Step 4: SEAR STEAK

In pan used for onions, heat 1 tsp. oil over medium heat. When oil is hot, add steaks and sear until golden brown and cooked through, about 4-5 min per side. Remove from pan and set aside to rest. USDA recommends cooking beef to an internal temperature of 145ºF.

Step 5: FINISH ONIONS

Return onions to pan, add mushrooms, garlic and half the parsley. Sauté until soft, about 3-4 min. Add remaining half & half, a pinch of salt and pepper. Sauté until sauce begins to thicken, about 2-3 min. Remove from heat, add spinach and mix gently to wilt.

Step 6: PLATE YOUR DISH

Divide mashed potatoes between two plates. Place one steak next to potatoes and top with mushroom sauce. Garnish with remaining parsley.
