Shrimp Fra Diavolo

Garlicky shrimp with roasted tomatoes and herbs tossed with buttery angel hair pasta.

Fra Diavolo literally translated means, “brother devil”.  Shrimp fra diavolo most likely got its name from the fiery hot peppers that were used to season the dish. This dish has many variations, some include a mix of different seafood along with cream and others are lighter with just tomatoes and olive oil.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Rinse and dry all produce. Bring 6 cups of salted water to a boil. Remove thyme and parsley leaves from stem and chop; they can stay together. Peel and julienne the onion. Mince the garlic. Grate the Grana Padano. Remove shrimp from the package and pat dry.

Step 2: BOIL PASTA

Add the angel hair pasta to the boiling water and cook for 4-5 minutes or until al dente. When done drain well and drizzle with 2 tsp of oil to keep it from sticking together.

Step 3: SAUTE THE VEGETABLES

In a large sauté pan over medium heat add half of the butter. When hot and melted add the yellow onion, chili flakes (use less if you prefer less heat) and garlic. Sauté for 4-5 minutes until soft and fragrant.

Step 4: SAUTE THE SHRIMP

Push the garlic and onions over to one side of the pan. Add 1 tsp. of oil. Season the shrimp with a pinch of salt and pepper. Add to the pan with the vegetables and sauté on each side for 2-3 minutes until pink, opaque and firm.

Step 5: FINISH THE PASTA

Add the remaining butter, roasted tomatoes, parsley and thyme, angel hair pasta and the grana padano. Mix well to incorporate. Season to taste with salt and pepper.

Step 6: PLATE YOUR DISH

Divide the pasta between 2 bowls. Enjoy!
