Sirloin and Asparagus Fusilli with Red Wine Cream Sauce

Step 1: COOK THE PASTA

Read through the entire recipe before getting started. Bring 4 cups salted water to boil in a large pot. Add fusili and cook until al dente, about 8 min. Reserve ½ cup of pasta water. Drain, set aside. While fusilli is cooking, begin the mise en place (Step #2).

Step 2: MISE EN PLACE

Wash and dry all produce. Remove bottom inch from asparagus, then chop into 1” pieces. Peel and mince shallot. Mince or grate garlic. Remove parsley from stem; discard stems and rough chop leaves. Remove steak from package; rinse and pat dry.

Step 3: SEAR THE STEAK

Heat 1 tsp. oil in medium pan over medium heat. Season steak with salt and pepper. Once oil is hot, add steak and sear until golden and caramelized, about 4 min per side. Remove steak from pan and set aside. Note: USDA recomends cooking steak to an internal temperature of 145ºF.

Step 4: MAKE THE SAUCE

Add shallot and garlic to pan used for steak, still over medium heat; sauté 3-5 min until soft and lightly browned. Add red wine; simmer until reduced to half, about 2-4 min. Add reserved pasta water and heavy cream whisking until incorporated; simmer until lightly thickened, about 4-6 min. Season with a pinch of salt and pepper.

Step 5: FINISH THE PASTA

Add cooked fusilli and asparagus to the sauce, mix until incorporated. Cook until asparagus is tender, about 3-5 min. Slice steak into ¼” slices and add to fusilli.

Step 6: PLATE YOUR DISH

Divide pasta between two bowls. Garnish with parsley. Enjoy!
