Sirloin with Caramelized Onion Relish, Chipotle Chick Peas & Arugula

Seared sirloin topped with a caramelized onion relish, served with chick peas seasoned with garlic and chipotle chili powder and fresh arugula.

ABOUT THE DISH

The chick pea, or garbanzo bean, is a legume that is high in protein, fiber, iron and other minerals. It is a very versatile food and is eaten all around the world.

Arugula is more commonly known around the world as rocket. It has a slightly peppery flavor and can be used like an herb, a leafy salad green or leafy vegetable.

Grass-fed sirloin
Chickpeas
Arugula

Step 1: MISE EN PLACE

Read through entire recipe before beginning. Rinse and dry all produce. Peel red onion and julienne thinly. Remove thyme leaves from stem and chop. Mince garlic. Remove sirloin from package and pat dry. Season sirloin on all sides with a pinch of salt and pepper.

Step 2: MAKE THE ONION RELISH

Heat 1 Tbsp. oil in a large saute pan over medium heat. Add onions and a pinch of salt and pepper and cook, stirring occasionally for 10 minutes, until onions are becoming lightly caramelized (browned). While onions are cooking, mix together brown sugar, rice vinegar and chopped thyme. When onions are caramelized, add vinegar mixture and stir well, take off of heat and set aside in a bowl. The relish can be served warm or room temperature. Rinse out the pan and wipe dry.

Step 3: SEAR THE SIRLOIN

In the same sauté pan over medium heat add 1 tsp. of oil. When hot, add the sirloin and sear for 3-4 minutes on each side. Remove from pan and set aside and cover with foil to keep warm. USDA recommends cooking beef to a minimum internal temperature of 145ºF.

Step 4: COOK THE CHICK PEAS

In the same saute pan used for the sirloin, heat 1 tsp. oil over medium heat. Add garlic and chipotle powder and sauté for 30 seconds, until garlic becomes fragrant. Add chick peas and a pinch of salt and stir well to combine. Sauté chick peas for 1 minute to warm through.

Step 5: FINISH THE CHICK PEAS

Take chick peas off the heat and add arugula to pan. Season with salt and pepper to taste. Toss to incorporate with chick peas, then plate your dish.

Step 6: PLATE YOUR DISH

Divide the chick peas and arugula between two plates. Place sirloins on plates and top with onion relish. Enjoy!
