Step 1: MISE EN PLACE

Read through entire recipe before getting started. Bring 6 cups salted water to a boil in a medium pot. Wash and dry all produce. Remove stems from shiitake mushrooms; discard stems, and slice in ¼” pieces. Slice cremini mushrooms into ¼” thick pieces (mushrooms can be mixed together). Peel and julienne shallot. Mince or grate garlic. Mince parsley leaves and stems. Slice lemon in half, then juice.

Step 2: COOK THE PASTA

Add spinach fettucine to boiling water and cook 8-10 min. Reserve 1 cup pasta water, then drain well. While pasta is cooking, start sautéing your vegetables (Step #3).

Step 3: SAUTE VEGETABLES

Heat 1 Tbsp., oil over medium-high heat in a large sauté pan. Add mushrooms and sauté 5 min until lightly golden with crispy edges. Reduce heat to medium; add shallots and garlic, and sauté for 2 min.

Step 4: MAKE THE SAUCE

Add heavy cream to vegetables while stirring. Add reserved pasta water and 1 Tbsp. lemon juice and bring to a simmer.

Step 5: FINISH PASTA

Add pasta to sauce and toss until sauce starts clinging to pasta and begins to thicken, about 2 min. Add Parmesan and toss.

Step 6: PLATE YOUR DISH

Divide pasta between two bowls and garnish with parsley. Enjoy!
