Sweet Brown Sugar Chipotle Salmon with Roasted Broccoli, Brown Rice & Scallions

Sweet brown sugar and smoky chipotle smothered salmon bowls with crisp roasted broccoli, brown rice and fresh scallions. Simple, yet satisfying.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Preheat oven to 375ºF. Wash and dry all produce. Remove root ends from scallions and discard; then, thinly slice. Cut broccoli into florets. Remove salmon fillets from package; rinse and pat dry.

Step 2: COOK THE RICE

Place brown rice, 1½ cups water and a pinch of salt and pepper in medium pot over medium heat. Bring to a boil, cover and reduce heat to low. Cook 25-30 min until done. Fluff with fork. While rice is cooking, begin making chipotle-brown sugar (Step #3).

Step 3: MAKE CHIPOTLE-BROWN SUGAR

Place brown sugar and chipotle sauce in small sauté pan over medium heat. Stir until brown sugar has dissolved; then bring to simmer and cook 1-2 min. Pour chipotle-brown sugar into 2 small bowls; ¼ for the salmon and ¾ to drizzle over the dish at the end. Note: If less heat is desired add 2 Tbsp. water and stir to combine.

Step 4: PREP SALMON

Place salmon on foil-lined baking sheet, and season with a pinch of salt and pepper. Brush or spoon small bowl of chipotle-brown sugar over salmon. Place broccoli next to salmon, drizzle with 2 Tbsp. oil and a pinch of salt and pepper.

Step 5: BAKE SALMON

Bake salmon and broccoli for 10-12 min until salmon is cooked and broccoli is tender. The USDA recommends cooking salmon to an internal temperature 145ºF.

Step 6: PLATE YOUR DISH

Divide brown rice between two bowls, top with salmon and roasted broccoli. Drizzle with remaining ¾ chipotle-brown sugar and garnish with scallions. Enjoy!
