Sweet Potato Curry over Fluffed Jamine Rice

Tender sweet potatoes cooked in a coconut milk & red curry broth, finished with wilted local greens and served over a warm bowl of jasmine rice!

This sweet potato curry is a recipe from heaven. It is warm, hearty, filling, flavorfull and with a kick! Coconut milk is a great way to achieve creamy textures  without any dairy! Plus it adds the yummiest of flavors with its bright and upbeat tangy and fatty notes. So turn your nexflix on, curl into a blanket and cuddle up with this heaty bowl of beauty after a long day of work.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Peel, then dice sweet potatoes into ½" pieces. Tear cilantro leaves and stems. Cut lime into fourths.

Step 2: COOK RICE

Place jasmine rice, 1¼ cups water and a pinch of salt and pepper in medium pot over medium heat. Bring to boil; cover and reduce heat to low. Cook 15-20 min until tender. Fluff with fork. While rice is cooking, begin curry (Step #3).

Step 3: BEGIN CURRY

Heat 1 Tbsp. oil in medium deep sauté pan over medium heat. Add garlic and red curry paste and cook 1-2 min until very aromatic. Add sweet potatoes and sauté another 2-3 min until incorporated.

Step 4: SIMMER CURRY

Add coconut milk, 2 cups water and a pinch of salt and pepper. Mix well and bring to a simmer. Cook simmering for 20-25 min until sweet potatoes are tender and broth has reduced and thickened. Remove from heat.

Step 5: FINISH CURRY

Fold rosé blend greens into curry to wilt and incorporate.

Step 6: PLATE YOUR DISH

Divide rice between two bowls. Top with sweet potato curry and garnish with cilantro. Serve with a squeeze of lime. Enjoy!
