Tarragon Sirloin with Tahini Roasted Vegetables

Grass-Run Farms sirloin topped with a tarragon butter and served with roasted carrots, garlic and red onion in a tahini sauce.

ABOUT THE DISH

Tahini is a paste made from sesame seeds and oil. It is popular in Middle Eastern cuisines and used many ways. For example, in hummus and baba ganoush, as well as on its own as a dip.

COMPOUND BUTTER Mixtures of butter and other ingredients. Primarily, they are used to enhance flavor in various dishes, in a fashion similar to a sauce.
Deglaze To dissolve the small particles remaining in a pan by adding liquid and heating.
Sear To cook the surface of meat very quickly with intense heat.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Preheat the oven to 450ºF. Rinse and dry all the produce. Peel and dice carrots. Peel and julienne the red onion. Remove tarragon leaves from stems and chop. Mince garlic. Open butter and place into a small bowl and leave at room temperature to soften. Remove sirloins from package rinse and pat dry.

Step 2: ROAST THE VEGETABLES

In a large mixing bowl combine the carrots, red onion, garlic, and tahini. Add 1 Tbsp. of oil and a pinch of salt and pepper and toss to combine. Place vegetables on a foil lined sheet pan and roast in the oven for 40 minutes, mixing the vegetables around halfway through the cooking process. While the vegetables are roasting, move on to sear the sirloin (step 3).

Step 3: MAKE THE COMPOUND BUTTER

Add the tarragon to the small bowl of butter and use a fork to mash the two ingredients together until well combined.

Step 4: SEAR THE SIRLOIN

Note: (don’t start searing the sirloin until you only have 10 minutes left on the vegetable cook time.) In a medium sauté pan, on medium heat, add 1 tsp. of oil. Season each side of the sirloin with a pinch of salt and pepper. When the pan is hot place the steaks in and sear on each side for 3-4 minutes for medium rare. When the steaks are done remove from the pan and set on a cutting board to rest.

Step 5: MAKE THE SAUCE

In the pan used to sear the steak, still on medium heat, add the white wine to deglaze then add the honey and simmer until reduced slightly, about 2 minutes. When done remove from heat and toss with the roasted vegetables.

Step 6: PLATE YOUR DISH

Divide the roasted vegetables between two plates. Place the sirloins on top and dollop each steak with half of the compound butter. Enjoy!
