Thai Turkey Burgers with Lime Slaw & Yucca Fries

Juicy, Thai turkey burgers on a toasted bun loaded with spicy slaw and served with crispy yucca fries.

Yucca is a really cool tuber! In other parts of the world yucca is eaten the same way we eat potatoes. In our recipe, we peel the tough outer skin and slice the yucca up the middle into fries. Then we serve it up along side our juicy turkey burger.

Step 1: MISE EN PLACE

Read through entire recipe before getting started. Pre-heat grill to medium (400ºF). Wash and dry all produce. Julienne cabbage. Trim top and bottom of radish and shred. Trim top and bottom of carrot, peel and discard skin. Continue peeling carrot to get long curly carrot shreds until nothing is left. Rough chop cilantro stems and leaves. Peel yucca and cut into fries. Zest lime, then cut in half and juice. Remove ground turkey from package and place into a medium mixing bowl.

Step 2: MAKE THE SLAW

Combine spicy mayo, carrot, cabbage, radish and half the cilantro in a medium bowl. Add 1 tsp. lime juice and 1 tsp. lime zest. Season with a pinch of salt and pepper. Mix well to combine.

Step 3: PREP THE BURGERS

Season ground turkey with curry blend, 1 tsp. salt, and a pinch of black pepper. Add remaining lime zest and panko and mix until well combined.

Step 4: GRILL THE BURGERS

Form ground turkey into two patties. Oil grill grates and place patties onto hot grill. Cook for 3-4 on each side until cooked through. While burgers are grilling start making the yucca fries (step #4). When burgers are almost done, place buns on the grill to toast. If not using a grill cook your burgers in a large skillet over medium heat for 3-4 minutes on each side until cooked through.

Step 5: FRY THE YUCCA

Heat 1 1/2 cups oil in a medium pot over medium high heat. When hot, add yucca fries, trying not to crowd the pan, and fry for 7-8 minutes until golden brown. Transfer to paper towels to drain and sprinkle with a pinch of salt.. Cook in multiple batches if necessary.

Step 6: PLATE YOUR DISH

Place a turkey burger on a tosted bun, top with a little bit of slaw. Add the yucca fries to the side along with any remaining slaw. Garnish with remaining cilantro. Enjoy!
