Toasted Sesame Beef Stir-Fry

A beloved classic: vermicelli noodle stir-fry with toasted sesame beef, root vegetables, broccoli and a sweet and salty sauce.

This recipe is probably one of the easiest go-to recipes in our book. We keep things healthy with vermicelli noodles and tons of veggies. Plus this stir-fry packs a lot of flavor with the simplicity of our favorite Asian flavors. And no, there’s nothing wrong with eating the whole pot by yourself. We don’t judge. This meal will fill your kitchen with a warm toasted sesame smell that will make everyone ready for dinner. Make this meal on one of those busy nights when you don’t feel like cooking!

Ingredients
Sesame seeds
Stir-fry Sauce
Sesame oil
Rice vermicelli noodles
Broccoli
Carrot
Diakon radish
Grass fed ground beef

Cooking terms for this recipe

Julienne To slice into thin strips about the size of matchsticks.
Stir-Fry To fry something over high heat quickly (with little oil) while stirring constantly.
Garnish To add decorative or savory touches to food.

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Bring 6 cups water, with a pinch of salt, to a boil in a medium pot. Wash and dry all produce. Peel daikon radish and discard peel; then, julienne into 1⁄4" matchsticks. Peel carrot and discard peel; then, julienne into 1⁄4" matchsticks. Cut broccoli into florets and dice any stalk pieces into 1⁄2" pieces. Remove ground beef from package and pat dry.

Step 2: COOK NOODLES

Add vermicelli noodles to boiling water; cook at a rolling boil for 3-4 min until noodles are al dente. Drain well, rinse with cold running water to cool and set aside.

Step 3: COOK BEEF

Heat half sesame oil medium sauté pan or wok over medium heat. Add ground beef and a pinch of salt and pepper. Cook - breaking apart with a spoon or spatula - until done, about 5-8 min. Remove from pan. The USDA recommends cooking ground beef to an internal temperature of 160ºF.

Step 4: STIR-FRY VEGGIES

Add remaining sesame oil to previously used sauté pan or wok, add daikon radish, carrots and broccoli and stir-fry for 2-3 min. Add half sesame seeds and ground beef and sauté for another 3-4 min until vegetables begin to soften.

Step 5: FINISH STIR-FRY

Add vermicelli noodles and stir-fry sauce to pan or wok. Stir-fry another 4-5 min until sauce has thickened over the noodles.

Step 6: PLATE YOUR DISH

Divide stir-fry between two bowls and garnish with remaining sesame seeds. Enjoy!
