Triple Crown Harvest Edition BBQ Chicken Flatbread

Triple Crown Harvest Edition BBQ sauce is the star of this flatbread made with braised BBQ chicken with mozzarella cheese, sliced red onions and topped with green onions. Simple pleasures!

Time: 40-45 min

This dish is all about the Triple Crown! This Harvest Edition BBQ sauce is hand crafted with with locally grown tomato paste, all organic condiments and lots of Minnesota love! This award winning BBQ sauce is used to slowly braise and pull the chicken. This cheesy flatbread is exactly what you need for a weeknight pleasure or game night, it is football season after all!

Step 1: MISE EN PLACE

Read though the entire recipe before getting started. Wash and dry all produce. Remove root ends from green onions and discard; then, bias slice. Peel, then thinly slice red onion. Place 1 chicken breast in large zip-top bag or between two sheets of plastic wrap. Use a meat mallet or heavy pan and pound chicken flat, ¼” thick. Repeat with second chicken breast. Season both with a pinch of salt and pepper.

Step 2: SEAR CHICKEN

Heat 1 Tbsp. oil in large sauté pan. Sear chicken until lightly golden, about 1 min each side. Remove from pan. Chicken will not be fully cooked at this point.

Step 3: COOK CHICKEN

Mix ½ BBQ sauce and 1 cup water in a small container. Add sauce to chicken and bring to a simmer. Cover and cook simmering for 15 min. Shred chicken using two forks pulling in opposite directions. Tear into medium size shreds and continue to cook, simmering until sauce has thickened, about 5-6 min. USDA recommends cooking chicken to an internal temperature of 165ºF.

Step 4: MAKE FLATBREAD

Dust a flat solid surface with a pinch of dusting flour. Place pizza dough in flour then, dust top of dough with a pinch of dusting flour. Use a rolling pin or wine bottle and roll dough into a rectangular/oval shape, about ¼" thick. Transfer dough onto a foil-lined baking sheet and place in the oven. Bake for 5-6 min until the dough is par-baked or lightly cooked. Dough will not be fully cooked at this point. Spread half mozzarella over flatbread. Then add BBQ chicken and red onion. Top with remaining mozzarella.

Step 5: BAKE FLATBREAD

Bake 20-25 min until flatbread is crisp and fully cooked.

Top flatbread with green onions and drizzle remaining BBQ sauce. Enjoy!
