Zucchini, Caramelized onion and Goat Cheese Tart

Flakey puff pastry piled high with caramelized onions and sliced zucchini topped with creamy goat cheese and sharp cheddar then drizzled with honey.

Puff Pastry is dough with many, many layers. In between the layers hides rich and delicious butter. When the puff pastry bakes, the butter melts, creating steam and “puffing” up the layers of dough to create a flakey and delicious pastry.

Zucchini
Yellow Onion
Rosemary
Garlic
Peppadew Peppers
Kalamata olives
Dusting Flour
Honey
Goat cheese
White Cheddar

Cooking terms for this recipe

Caramelize To cook a food (fruit or vegetable) slowly until it becomes brown and sweet.
Julienne To slice into thin strips about the size of matchsticks.
Peppadew The brand name of a sweet piquanté pepper. Sweet, mild and pickled.

Step 1: MISE EN PLACE

Read through the entire recipe before getting started. Pre-heat the oven to 400ºF. Wash and dry all produce. Trim the top and bottom from the zucchini and thinly slice. Peel and julienne the yellow onion. Remove rosemary from the stem and chop. Slice the kalamata olives. Slice the Peppadews. Mince the garlic. Grate the sharp white cheddar cheese. Crumble the goat cheese.

Step 2: SAUTE THE VEGGIES

In a large sauté pan over medium heat add 1 Tbsp. of oil. when hot add all of the onions and zucchini and the sauté for 8-10 minutes stirring occasionally until the onions have turned a nice golden brown. Remove from heat and stir in the rosemary and garlic. While the onions are caramelizing move on to step #3, roll out the puff pastry.

Step 3: ROLL OUT PUFF PASTRY

Sprinkle some dusting flour on a clean dry surface (cutting board or counter). Lay out your sheet of puff pastry and dust with another pinch of flour. Use a rolling pin roll out the puff pastry to be a littler bigger than a sheet of notebook paper (8”x11”). Place the puff pastry onto a, foil lined, flour dusted, sheet pan. Place in the fridge to keep cold while the onions finish caramelizing.

Step 4: TOP THE TART

Top, in this order: caramelized onions and zucchini, kalamata olives, Peppadews, cheddar and goat cheese. Place in the oven and bake for 20-25 minutes until the puff pastry is golden brown.

Step 5: FINISH THE TART

Remove the tart from the oven and drizzle with honey.

Serve the tart family style. Enjoy!
